¼ cup fresh parsley, chopped
1 onion, finely chopped
4 cups fresh breadcrumbs
½ cup butter
2 tbsp butter, melted
3 tsp poultry seasoning
1 tsp salt
½ tsp pepper
Instructions:
Preheat the oven to 350 degrees. Place a wire rack on top of a baking tray. Set aside.
Pound pork tenderloin into about half an inch of thickness.
Meanwhile, mix together parsley, breadcrumbs, poultry seasoning, some salt, and pepper in a bowl and set aside.
Melt butter in a pan on medium fire and sauté onions until translucent.
Add the parsley and breadcrumbs mixture and stir until coated in grease.
Divide the stuffing between the two pieces of pork tenderloin and spread it onto the meat.
Gently roll the meat and secure the seams with toothpicks.
Transfer the stuffed tenderloin onto the prepared rack, baste generously with melted butter and bake for about 90 minutes, basting halfway through with the remaining butter.
Let it rest on a chopping board tented with foil for about 5 minutes, then slice and serve.
